Simple Italian Pasta

This delicious pasta dish is very simple and comes together quickly. Try adding even more veggies to change up the flavor and make it healthier!

Makes: 4 Servings

Ingredients
8 oz whole wheat pasta
1 cup frozen peas
3 cloves garlic, minced
4 strips turkey bacon
2 large eggs
3/4 cup Parmesan cheese
1/4 tsp pepper

 

Instructions

  1. Cook the pasta according to package instructions. When there is roughly 1 minute left add the frozen peas in so they thaw.
  2. While the pasta is cooking, add the bacon to a large nonstick skillet and cook over medium heat until crisp.
  3. Crack the eggs into a bowl, add ½ cup of Parmesan cheese, salt and pepper. Whisk together until the egg yolk and white are fully combined.
  4. Chop the bacon into small bite-sized pieces.
  5. Drain pasta and peas, keeping ¾ cup of the water. Set water aside.
  6. Pour the hot pasta and peas, egg mixture and ¾ cup of water into the skillet with bacon grease. Heat the pan to low and stir constantly so that the egg mixes evenly and does not scramble. Continue stirring and leave on heat until the egg is cooked.
  7. Serve each portion with 1 Tbs of the leftover Parmesan cheese.
