Turkey Tostadas

These turkey tostadas are a yummy variation on tacos that use leftover cooked turkey. Want other taco ideas? Try vegetarian tacos, or fish tacos!

Makes: 4 Servings

Ingredients
2 cups cookedground or shredded turkey
2 Tbs taco seasoning
1/2 cup water
4corn tortillas
1/4 cup black beans,no sodium added, drained and rinsed
1/4 cup shredded Cheddar or Monterey Jack cheese, low fat

Optional Toppings:chopped tomatoes,lettuce,chopped onion,taco sauce,plain yogurt,guacamole, salsa, cilantro

Instructions

  1. Preheat the oven to 375°F.
  2. In large skillet over medium heat, combine turkey, taco seasoning and water.
  3. Bring mixture to a boil, reduce heat and simmer 5 minutes, stirring occasionally.
  4. Place tortillas on a cooking sheet and bake for4-7 minutes or until tortillas are crispy.
  5. Add beans, turkey and cheese to each tortilla.Return to oven and cook for 2-3 minutes or until cheese is melted.
  6. Top with tomatoes, lettuce, onions and taco sauce. Garnish with yogurt and guacamole if desired.
