Turkey Shepherd’s Pie

Makes: 8 Servings

Ingredients
2 medium onions, sliced
1 clove garlic, minced(or 1 tsp pre-minced garlic)
2 Tbs vegetable oil
4 cups turkey or chicken breast, cooked, chopped
1/4 cup whole wheat flour
2 cups chicken broth, no sodium added
2 cups carrots, sliced
1 can (15 oz) diced tomatoes, low sodium, drained
1/2 tsp dried rosemary
6 potatoes, baked, peeled and mashed

 

Instructions

  1. Preheat oven to 375°F. Grease a casserole dish with 1 Tbs oil.
  2. Add onions, garlic and the other Tbs oil to a large saucepan and cook over medium heat for about 5 minutes.
  3. Add the turkey and sprinkle in the flour. Stir to blend.
  4. Add the chicken broth, carrots, and tomatoes. If using rosemary, add that too. Cook over medium heat until thickened, then transfer mixture to casserole dish.
  5. Spread the mashed potatoes over the top. Bakefor20-30 minutes, or until browned.
