Pizzas are an easy way to use leftovers. They’re also a great way to add more vegetables into your diet! Try using leftover ground meat, chicken, or beans as toppings. Get creative with this pizza recipe, it’s a crowd (and kid) favorite!
Makes: 2 servings
Ingredients
2 split whole wheat English muffins (or 2 small whole wheat pitas)
1/2 cup pizza sauce
1/2 cup mozzarella or cheddar cheese, low fat, shredded
1/4 cup green pepper, chopped
1/4 cup mushrooms, fresh or canned, sliced
Optional: other vegetables, Italian seasoning
Instructions
- If using an English muffin, toast until slightly brown.
- Top pita or muffin with pizza sauce, vegetables, and cheese.
- Sprinkle with Italian seasonings as desired.
- Place pizza in toaster oven (or regular oven preheated to 350°F).
- Heat until cheese melts.
