Stuffed Tomatoes

You’ve probably heard of stuffed peppers or stuffed summer squash but what about stuffed tomatoes? This recipe is great with chicken, fish, or a side salad. Freeze the excess tomatoes to use for sauce or with rice recipes.

Makes: 4 Servings

Ingredients
4 large tomatoes
3/4 cup fresh French or Italian bread crumbs
2-3 cloves garlic, finely minced (or 2 tsp minced garlic)
6 Tbs finely minced basil

3 Tbs grated Parmesan cheese
Olive oil or cooking spray

 

Instructions

  1. Turn your oven on to broil.
  2. Cut the tomatoes in half horizontally.
  3. Using a spoon, remove the seeds and juice from the tomatoes.
  4. In a bowl, combine bread crumbs, garlic, herbs and cheese.
  5. Spoon about 2 tablespoons of the bread crumb mixture into each tomato half and drizzle with olive oil or spray with cooking spray
  6. Place in the oven set to broil, cook for 5 minutes or until the filling is golden brown
