We love Spanish rice. It’s a delicious staple of many households. To make this a complete meal, try adding black or kidney beans! This recipe is heart healthy because we use our own spice blend rather than a sodium-packed pre-made spice blend like adobo or sazon.
Makes: 6 servings
Ingredients
2 Tbs vegetable oil
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1 tsp garlic powder
1 tsp chili powder
1 tsp ground red pepper
1/2 tsp salt
1 tsp black pepper
1 cup brown rice, uncooked
1 can (15 oz) chopped tomatoes, no sodium, undrained
2 cups water
Instructions
- Brown green pepper and onion in oil until tender.
- Stir in the spices, rice, tomatoes with juice, and water.
- Bring to a boil.
- Cover and cook over low heat for 20 minutes or until rice is done.
