Smothered Greens

Looking for a healthier greens recipe? Our Smothered Greens are for you. This recipe uses turkey breast instead of a high fat processed meat like bacon, and lots of spices instead of salt which helps to make it heart healthy. Check your local farmers market for greens when they’re in season!

Makes: 5 servings

Ingredients
3 cups water
1/4 pound turkey breast, smoked, skinless
1 Tbs hot pepper, chopped
1/4 tsp cayenne pepper
1/4 tsp cloves, ground
2 garlic cloves, crushed
1/2 tsp thyme
1scallion stalk, chopped
1 tsp ground ginger
1/4 cup onion, chopped
2 lb mustard greens, or turnip, collard, kale, or mixture

 

Instructions

  1. Prepare greens by washing thoroughly and removing stems.
  2. Place all ingredients except greens into large saucepan and bring to a boil.
  3. Add greens to turkey stock. Cook 20-30 minutes until tender.
