Black Bean Soup

This soup is a quick and easy one pot meal that your family is sure to love. Black beans are full of flavor, and they are also a healthy plant-based protein that is low in fat and high in fiber. A perfect food for heart health.

Makes: 6 Servings

Ingredients
1 cup frozen peppers and onions, thawed
1 cup frozen corn, thawed
1 1/2 cups vegetable broth, no sodium
2 cans (15 oz each) black beans, drained and rinsed
1 can (14 oz) diced tomatoes, no sodium
1 Tbs oregano
2 Tb cumin
1/2 tsp garlic powder, dried

 

Instructions

  1. Combine all ingredients in a saucepan.
  2. Cover and simmer for 20-25 minutes or until vegetables are tender.

Soup bowl of black beans, corn, diced tomatoes and onions made in vegetable broth.
