Muffins are like cake for breakfast. This recipe is low in fat and full of flavor.
Makes: 12 Servings
Ingredients
Non-stick cooking spray
4 Tbs unsweetened applesauce
1/4 cup sugar
1 egg
2 ripe bananas
2 Tbs water
1/4 cup all purpose flour
1/4 cup whole wheat flour
1/4 cup quick cooking oats
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup blueberries or strawberries (fresh or frozen)
Instructions
- Preheat oven to 350°F. Spray a 12-cup muffin pan with non-stick cooking spray.
- In a medium-sized bowl, combine applesauce, sugar, egg, banana, and water. Mix well.
- In a large bowl, mix flours, oats, baking powder, baking soda, and salt.
- Add the applesauce mixture to the bowl with the dry ingredients. Mix just until the batter is moist.
- Gently add berries into the mixture.
- Fill each muffin cup 3/4 full with batter.
- Bake for 25-30 minutes until lightly brown.
- Cool for 10 minutes and remove from pan.
