Ingredients
1 cup frozen peppers and onions, thawed
1 cup frozen corn, thawed
1 1/2 cups vegetable broth, no sodium
2 cans (15 oz each) black beans, drained and rinsed
1 can (14 oz) diced tomatoes, no sodium
1 Tbs oregano
2 Tb cumin
1/2 tsp garlic powder, dried
Instructions
- Combine all ingredients in a saucepan.
- Cover and simmer for 20-25 minutes or until vegetables are tender.
