This pumpkin bread recipe uses applesauce instead of oil, which decreases the calories from fat.

Ingredients
1 (15 oz) can pumpkin puree
1 cup sugar
1 cup applesauce
2 tsp vanilla
4 eggs
2 tsp baking soda
3 cup all purpose flour
2 Tbs pumpkin spice
1 tsp salt
Optional: walnuts, chocolate chips, raisins
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, beat together pumpkin, sugar, vanilla, and egg.
- Add the remaining ingredients and mix well.
- Pour into 2 greased 8x4x2 inch loaf pans and bake for 45 mins.
- Cool on a wire rack for 10 minutes. Remove from pan and cool completely.
