Basic Vegetable Quiche

Egg dishes and quiches are a great way to add vegetables to your breakfast. This recipe is a perfect way to use frozen or canned vegetables you might already have in your pantry.

Makes: 6 Servings

Ingredients
1 pie crust, baked, 9-inches
1 cup mixed vegetables, chopped
1/2 cup shredded cheese
3 eggs
1 cup non fat milk
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder

 

Instructions

  1. Preheat oven to 375°F.
  2. Mix the eggs, milk, salt, pepper, and garlic powder in a medium bowl with a fork or whisk. Add the cheese and vegetables and gently stir to combine. Pour mixture into pie crust.
  3. Bake for 30-40 minutes, or until a knife inserted near the center comes out clean.
  4. Let the quiche cool for 5 minutes before serving.
