Citrus Tuna Melt

Makes: 6 Servings

Ingredients
1 can (12 oz) tuna, in water, drained
2 Tbs lemon or lime juice
1/2 cup onion, diced
2 Tbs of canned tomatoes, low sodium, diced
1/2 cup apple, diced
1/4 cup celery, diced
1/4 tsp black pepper
6 slices whole grain bread
3 slices American cheese, cut into halves

Optional Ingredients: fresh chopped parsley or cilantro, cayenne pepper or jalapeno chilies

Instructions

  1. Preheat oven to 350°F.
  2. In a medium-size bowl, combine tuna, lime juice, onion, tomatoes, apple, celery, and optional ingredients if using. Mix well.
  3. Toast the bread slices.
  4. Place the toasted slices on a cookie sheet. Put an even amount of tuna mixture on top of each slice.
  5. Put 1/2 cheese slice on top of the tuna and bake for about 3 minutes.
  6. Add sliced tomatoes and lettuce leaves on top if you like.

Whole wheat bread sandwich of tuna fish mixed with diced tomatoes, apples, and celery, topped with a slice of American cheese.
