Brown rice and beans is quick and easy, budget friendly, and you’re likely to have most of these ingredients in your pantry. If you don’t have fresh vegetables on hand, feel free to use frozen ones instead!
Makes: 6 Servings
Ingredients
2 cups uncooked brown rice
2 cans (15 oz each) dark red kidney beans, drained and rinsed
3 cloves garlic, minced
2 tsp Cajun seasoning
3 stalks celery, chopped
2 small onions, chopped
2 green bell peppers, chopped
4 cups water (or low sodium vegetable broth)
Optional: 1/2 tsp salt and pepper, hot sauce, cooked sausage
Instructions
- Place all ingredients in slow cooker and stir together.
- Cook for 2 to 2 1/2 hours (depending on how tender you like your rice).
