Dark Chocolate Black Bean Brownies

These brownies are a source of filling fiber and protein with less added sugar than the average treat! So rich and delicious, no one will ever guess the surprise ingredient.

Makes: 12 Servings

Ingredients
1 can (15 oz) black beans, drained and rinsed
1/2 cup sugar
1/2 tsp baking powder
1/4 cup dark cocoa powder
3 eggs
3 Tbs canola oil
1 tsp vanilla
1 tsp instant coffee granules
1/3 cup dark chocolate chips

Optional: 1/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F. Place parchment paper in the bottom of an 8×8 inch baking pan. Lightly spray the parchment with cooking spray. If you do not have parchment paper, spraying the bottom of the pan is just fine.
  2. In a food processor or blender, blend all the ingredients except walnuts and chocolate chips until smooth.
  3. Pour batter into baking pan. Top with nuts and chocolate chips.
  4. Bake 30-35 minutes. Cool and cut into squares.
