Homemade Eggnog

This homemade (non-alcoholic) eggnog is a healthier version of the typically high-fat winter drink. Make it for the holidays, or simply enjoy it for a chilly weather treat!

Makes: 6 servings

Ingredients
2 cups milk, 1% or skim
2 tsp vanilla extract
2large eggs plus 1 egg yolk
1/3 cup sugar
1 tsp corn starch
Nutmeg for garnish

Optional Ingredients:2 long strips of orange or lemon zest

Instructions

  1. Add 1 1/2 cups milk, vanilla extract and the citrus zest (if using) to a medium saucepan and heat through.
  2. Meanwhile, whisk the eggs, egg yolk, sugar and cornstarch in a medium bowl until light yellow.
  3. Gradually pour the hot milk mixture into the egg mixture, whisking constantly, then pour back into the pan.
  4. Place over medium heat and stir constantly with a wooden spoon in a figure 8 motion until the eggnog begins to thicken, about 8 minutes. If you have a thermometer, check to see that the temperature has reached 160ºF (71ºC) or hotter.
  5. Remove from the heat and immediately stir in the remaining 1/2 cup of cold milk to stop the cooking.
  6. Transfer the eggnog to a large bowl and place over a larger bowl of ice to cool, then chill until ready to serve.
  7. Remove the zest and garnish with nutmeg.
