This recipe is a staff favorite. It can also easily be converted into a salad instead of a wrap! Simply add extra lettuce and toss!
Makes: 2 Servings
Ingredients
1 can (15 oz) black beans, drained and rinsed
1/2 cup red bell pepper, diced
1/2 cup onion, diced
1/2 cup corn, fresh or frozen
1/2 cup shredded carrots, divided (save a few for garnish)
1 Tbs cilantro
2 Tbs green onion
1/4 cup low fat Southwestern salad dressing
8 leaves of Bibb lettuce, washed (or lettuce of your choice)
Instructions
- Combine black beans, red pepper, onion, corn, cilantro, green onion and carrots. Toss with salad dressing.
- Spoon the black bean salad into lettuce cups. Top with the saved shredded carrots.
