Oven Baked Chicken Parmesan

This simple Oven Baked Chicken Parm is a perfect dinner for busy evenings! It takes less than 5 minutes to prepare and about 40 minutes to cook. Check out this blog post for more healthy one-pan meals.

Makes: 8 Servings

Ingredients
1 package (13 oz)uncooked whole wheat pasta
1 1/2 lb raw chicken breast tenders
1 jar (24 oz)pasta/marinara sauce (get a sauce with no added sugar!)
1 cup whole wheat panko breadcrumbs
3 cups water
1 1/2 cups shredded mozzarella cheese, reduced fat
1/2 cup grated Parmesan cheese

Optional Ingredients: oregano, basil, parsley

Instructions

  1. Preheat oven to 425°F and spray a baking dish with cooking spray.
  2. Add pasta, marinara sauce, water and optional herbs to the dish and stir to combine.
  3. Place chicken in a single layer on top. Cover tightly with aluminum foil. Bake the covered dish for 30 minutes.
  4. Uncover and stir. Spread mozzarella over the top and sprinkle with breadcrumbs and Parmesan cheese.
  5. Bake uncovered for 5-10 more minutes, or until cheese is melted and golden brown, pasta is tender, and chicken is cooked through.
  6. Top with additional herbs if desired.
