Grilled Chicken Caesar Salad

Adding a protein to a salad is a great way to turn a side dish into a filling meal. Don’t like chicken? Try adding tofu, shrimp, or beans! This healthier take on a classic Caesar salad uses Greek yogurt instead of mayo to increase protein and decrease fat. Feel free to add extra vegetables to make this recipe more colorful.

Makes: 5 Servings

Ingredients
10 cups romaine lettuce
8 Tbs Parmesan cheese
5 medium chicken breast, boneless and skinless

For dressing:
1 cup plain Greek yogurt, fat free
1/2 cup Parmesan cheese
3 Tbs olive oil
1 1/2 tsp Worcestershire sauce
1 tsp Dijon mustard
1 clove garlic, minced

 

Instructions

  1. Place all dressing ingredients in food processor, blender or jar with a lid and mix until smooth.
  2. Grill or broil chicken as desired.
  3. Mix lettuce and dressing into bowl. Slice grilled chicken breasts and add to the salad. Top with extra Parmesan cheese, if desired.
