Makes: 1 Servings
Ingredients
1/2 cup quick-cooking oats
1/2 tsp olive or canola oil
1 clove garlic, minced
1 cup water
1/4 cup low-fat milk
1/2 cup fresh spinach, chopped
2 Tbs Parmesan cheese
1 egg
salt and pepper
Instructions
- Over medium heat, sauté 1/2 tsp oil and garlic.
- Add half the spinach and stir for 1 minute until cooked.
- Add oats and water. Turn the heat to high and bring to a gentle boil.
- Lower the heat, stir in milk, and season with salt and pepper to taste. Continue to stir until creamy.
- Turn off the heat and stir in Parmesan cheese.
- Cook egg using your preferred method. Make sure egg and yolk are firm and cooked all the way through. Eggs should not be runny.
- Add the rest of the spinach to the oatmeal, along with the egg.
