Kale Slaw

This kale salad is a zesty side dish that is easy to make and a colorful way to get a variety of nutrients. The combination of savory and sweet will make you crave your kale.

Yield: 8 Servings
Ingredients
6 cups chopped kale, big stems removed
1/2 head of red cabbage, chopped
1/2 cup crumbled feta cheese
2 Tbs shelled sunflower seeds
1/2 cup dried cranberries

Dressing:
2 Tbs olive oil
Salt and pepper to taste
1/4 cup lemon juice (about 1 lemon)

 

Instructions

  1. Toss kale, cabbage, cranberries, feta cheese and sunflower seeds
  2. Mix dressing and pour onto slaw
  3. Toss salad and chill to serve
