Crock Pot Root Vegetable Stew

This Root Vegetable Stew is delicious and so easy to make. It also uses many budget friendly pantry items, and vegetables that last a long time, making it the perfect recipe for shopping on a budget. This recipe would taste great with any root vegetables, so feel free to swap out any you don’t like!

Makes: 6 Servings

Ingredients
1 1/2 cups low sodium vegetable broth, or chicken broth
1 large potato, peeled* and cubed
1 large sweet potato, peeled* and cubed
1 medium onion, chopped
2 parsnips, peeled* and chopped
2 carrots, peeled* and chopped
1 can (15oz) low sodium diced tomatoes with juices
1/2 tsp dried thyme
1/4 tsp ground pepper

Optional Ingredients: 1 tsp homemade All Purpose Seasoning

Instructions

  1. Add all ingredients into crock pot and stir.
  2. Cook on low for 7-9 hours or on high for 3-4 hours.
  3. Serve and enjoy!

*Note: Peeling your root vegetables decreases fiber. If you want to keep the peel on just make sure you scrub your veggies before adding them to the pot.
