Turkey Potato Salad

This is the perfect recipe for the any time you have leftover turkey or chicken. Try it in a sandwich with some whole wheat bread, on top of a salad or with some whole grain crackers. You could even have this in a lettuce wrap.

Makes: 2 Servings

Ingredients
1 cup cooked turkey or chicken, diced
1/4 cup celery, chopped
1 1/2 cup potato, peeled, cooked, chopped
1 Tbs onion, chopped
1/4 cup green bell pepper, chopped
3 Tbs Greek yogurt, plain, low fat
1 tsp mustard
1 Tbs fresh parsley, chopped
1/2 tsp dried dill or thyme
1/4 tsp ground pepper

 

Instructions

  1. Mix yogurt, mustard, dill or thyme, and pepper in a large bowl.
  2. Add turkey, celery, potato, onion, green pepper, and parsley and toss with dressing to combine.
  3. Serve and refrigerate any leftovers.
